    I’ll get the ball rolling with my favorite breakfast recipe. I call it the yummy skillet =0)

    Ingredients:

    4 eggs
    3 large potatoes
    1/2 cup shredded mozarella or cheddar cheese
    1/2 cup broccoli chunks
    1/2 cup cauliflower chunks
    1/3 cup mushrooms
    2 table spoons olive oil
    2 table spoons dried parsley
    1/2 diced tomato
    2 skillets

    Instructions:

    1. Cut up unpeeled potatoes into 1/2 inch cubes and bask them in the olive oil in a large bowl. Add in the dried parsley, about a teaspoon of salt and teaspoon of pepper.

    2. Lay out the potatoes on a single layer on an oven tray. Don’t use foil or else they’ll get stuck to it! Place potatoes in the oven on the middle rack at 420F for a total of 25 minutes. Flip them after 15 minutes.

    3. After about 10 minutes of potatoes baking, bring a pot of water to a boil. You can either boil the broccoli and cauliflower for 3 minutes, or steam them. I prefer steamed… Place the broccoli and cauliflower in a sieve and place the sieve just above the steaming water and cover it with a lid. I usually place the sieve on the rim of the pot so it can sit there to steam by itself. The veggies should be steamed within 3 minutes.

    4. Pour a bit of olive oil onto a large non-stick pan and leave it to heat to medium-high. Drop in the diced mushrooms and cook them for about 2 minutes.

    5. Throw the steamed veggies into the pan with the mushrooms. Add all 4 eggs into the veggie and mix until eggs are of scrambled consistency. If you prefer fluffy, this should only take about 1 minute. I usually leave it for 2-3, constantly stirring.

    6. Place the potatoes in a single layer into each of the 2 skillets. Cover the potatoes with the egg/veggie mix in each skillet. Sprinkle the cheese on top and finish off with the diced tomatoes. Place both skillets into the cooling oven for about 1 minute to get the cheese to melt in.

    And presto =) See pic of what mine looks like below:

    Add a side of fruit for dessert and enjoy!
    My juice of choice is extra pulpy tropicana with a mix of cranberry juice

    This one is really easy and soooooo good especially if you like asparagus!

    Lemon Asparagus Chicken

    Ingredients:
    1 tbsp. vegetable oil

    4 boneless chicken breast halves

    1 can cream of asparagus soup

    1/4 cup of milk

    1 tbsp. lemon juice

    1/8 tsp. black pepper

    HEAT oil in skillet. Add chicken and cook until browned.

    ADD soup,milk,lemon juice and pepper. Heat to a boil.Cover and cook over low heat 5 minutes or until done. Garnish with lemon slices if you want to. And wa la there it is! lol

    Another good one.

    Chicken broccoli bake

    Ingredients:

    Preheat oven to 350 degrees
    1 box of Orzo pasta

    Boneless chicken breasts… about 4

    1 can cream of chicken soup

    1/2 cup of mayonnaise

    1 tbsp. lemon juice

    1 bag of frozen broccoli (or fresh)

    1 can of French fried onions (if desired)
    ————————————————–
    Cut chicken into bite size pieces.

    In a mixing bowl add soup,mayonnaise,and lemon juice. Mix well

    Oil or spray a casserole dish then add chicken evenly. Add broccoli over the chicken then spread the soup mixture evenly over the broccoli. Place in oven for half hour uncovered. Then add French fried onions and cover with foil and place in oven for another half hour. Serve over Orzo.

    p.s. I always double the soup mixture because I like it creamy.

    I have made the chicken bake…but something similar to it… I take boneless chicken breast, 1 cup of rice, can of cream of chicken, black pepper and salt, frozen mixed veggies, or just brocolli, Bake that and when its done take it out of oven and place shredded cheddar cheese on top place aluminum foil back on till cheese is melted.

    KOREAN RIBS THAT ARE JUST ADDICTING LOL

    3 Lbs meaty English short ribs, each rib about 3 inches long…1/4 inch cut
    ¼ cup each: sugar, toasted sesame oil
    ½ cup soy sauce
    4 cloves garlic, minced
    2 green onions, minced
    2 T flour
    1 tsp red pepper flakes
    ½ tsp ground ginger
    ________________________________________________________________________

    1. Score the meat vertically, down the length of the rib every half-inch with a sharp knife without detaching the meat from the bones. Rub all over and into the cuts with sugar and sesame oil. Place the meat in a large non-aluminum container; let stand 30 minutes at room temperature.
    2. Combine soy sauce, garlic, green onions, flour, red pepper flakes and ginger; rub mixture all over the ribs and into the cuts. Let stand at room temperature 1 hour. (Or marinate the ribs for up to 4 hours in the refrigerator; bring room temperature before grilling.)
    3. Heat the broiler or prepare grill. Broil or grill the ribs until tender; turning frequently, 4-5 minutes per side, or about 20 minutes in all.

    BACON-WRAPPED SHRIMP WITH BASIL-GARLIC STUFFIN

    1 pound large shrimp
    1/3 cup chopped fresh basil
    1 ½ Tablespoons freshly grated Parmesan cheese
    2 garlic cloves, minced
    ½ cup prepared fruit-based barbeque sauce

    COOKING INSTRUCTIONS:
    Peel and devein shrimp, leaving tails on. Butterfly shrimp by cutting a slit along the back and gently pressing open.

    Combine basil, Parmesan, and garlic in a small bowl. Place basil mixture evenly in shrimp openings; press shrimp closed.

    Cook bacon over medium heat until partially cooked. Drain on paper towels.

    Wrap each shrimp with 1 slice bacon, and place on greased baking sheet. Brush barbeque sauce over shrimp, and bake at 400 degrees for 8 to 9 minutes.

    ***note*** If you can not find a fruit based barbeque sauce at your local grocery store….you may use ¾ part of usual brand barbeque sauce and ¼ part of your favorite fruit preserves.

    PERFECT SUMMER TIME TREAT WHEN U WANNA IMPRESS UR GUESTS :D….MOUTHWATERING YUMMY!!!!!!

    Also if any one has a good recipe for them skinny noodles the Chinese people make , I think its a special kinda sauce they use,Somebody said soy sauce but it just don’t taste the same must be more too it then that.You know which noodles I,m talking about right,Lo Mein Noodles .They serve them in the restaurants all the time.I would glady appreciate the help.Thanks

    Bomber I make those noodles too

    i use red peppers and green peppers
    onion and chicken breast for the seasoning i use just seasoning salt and fresh garlic the stuff i think your talking about its as close to the resterunt your going to get lol is HOISIN SAUCE and you just saute everything and then add the noodles and than add 2 TBS of soya sauce .

    i didn’t say how much of everything as some make a lot and some make a little and it goes according to taste on how much your making hope that helps

    Wow slim try so much I will go look for that sauce and try it, I just never knew what you called it.All I know is my husband loves them and I keep trying all different brands that you buy in the store and its not the same. Thanks again, I am so glad I asked.

    PESTO

    2 cups fresh basil leaves, thoroughly washed and patted dry(packed firmly)

    6 good-sized garlic cloves, peeled and chopped

    1 cup shelled walnuts

    1 cup extra virgin olive oil

    1 cup freshly grated Parmesan cheese

    ¼ cup freshly grated Romano cheese

    ½ tsp salt

    pinch of black pepper

    1. In a blender put basil, walnuts & garlic and blend until fine.
    2. Add cheese, salt, pepper and blend in with mixture. Slowly add extra virgin olive oil and mix to a fine consistency.

    YUMMY!!!!!!!!!

    OK, Guys , I forgot Gm Lucky is looking to buy Campbells Tomato Fiesta soup.She lives in Canada and they do not sell it there any more can anyone help her find some.If so then she can have it shipped to her.Her hubby loves it and shes lost without it.

    Hi all, I exchange recipes quite frequently with the roomies in my room, and here is one that a lot of people have never heard of. It’s a french dish, that most of us Canadians just love, and so very easy to make:

    Poutine:

    French fried potatoes, topped with Mozzarella cheese, and beef gravy.

    That’s it, the whole recipe hahaha. You can try different gravies like chicken and pork if you like, and even cheddar cheese if you prefer.

    Ooops just saw the thing about the tomato soup, thanks Bomb. I am still on the hunt for that soup, it’s the only thing my hubby like chicken fajitas made with lol. I have emailed the head of the Campbell’s soup company, and they do still make it, but it’s only available to certain grocery store chains. There was one store here that sold it but it went out of business, and now I can’t find it anywhere. They listed the chains that sold it, but we have non of those grocery stores around us.

    YUMMMMM I’m so excited, what a great idea Bomber! I love to trade recipes and have a ton. I’ll post some of my favorites soon! Snapple I make a chicken and broc pretty much the same as that except i add just a pinch of curry powder to the soup mixture, cover with sharp cheddar cheese instead and bread crumbs instead of the french fried onions. We love it!

    Wow , you mean I finally came up with a good idea.I think its great we can exchange recipes here . Something good instead of complaining all the time and saying nasty things about Mania.Thats what a blog should be for to communicate with each other and have fun.
    Snapple……….that is a great recipe for that chicken with broccoli because thats our kinda food. thanks for posting that. gonna try it real soon.Love you guys

    Amount Measure Ingredient — Preparation Method

    1 pound italian sausage
    2 large baking potatoes — cut into chunks
    1 large onion — chopped
    1/2 can real bacon bits
    2 cloves minced garlic
    2 cups kale — chopped
    2 cans chicken broth
    1 quart water
    1 cup heavy cream

    Cook sausage in a 300-degree oven. Bake approximately 1/2 hour, drain on paper towels and cut into slices.

    Place onions, potatoes, chicken broth, water, garlic in pot, and cook on medium heat until potatoes are done. Add sausage, bacon, salt, and pepper to taste, and simmer for another 10 minutes. Turn to low heat, add kale and cream. Heat through and serve.

    Thanks all, I just heard that I might be able to get the Walmart that is an hour away from me, to order it, so I am crossing my fingers lol. It’s a fairly new store that has a grocery store in it, the Walmart we have here doesn’t have a grocery store in it, so they can’t get it for me. If they can do it I will let ya all know, thanks again. :>) I can’t remember what the store chains were, I emailed Campbells about a year ago, (yes that’s how long I have been looking for this soup lol) I still have the email some place. One of the stores that I can remember is A&P Grocery store.

    Lucky I am from Canada as well and i LOVE poutine it is SOOOOOOOO good. But here is a yummy dessert recipie that is east to make and SOOOOO good to eat.

    Black forest pie.

    what you need:

    1 box of powder chocolate pudding
    500 ML whipped cream
    Grame cracker crust
    can of cheery or blueberry pie filling
    1 cup of milk

    in a bowl mix chocolate pudding mix, cup of milk and a cup of whipped cream until it is mixed throughly

    pour the mixture of pudding in the pie crust

    spread the remainder of the whipped cream over all the top of the pudding mixture

    with either the blueberries or cherries make a circle of about have the size of the pie in the middle of the whipped cream

    put in fridge for 2 hours then ENJOY

    PEANUT BUTTER PIE

    Amount Measure Ingredient — Preparation Method

    8 ounces cream cheese — softened
    2/3 cup peanut butter
    1 cup powdered sugar
    2 tablespoons milk
    4 ounces whipped topping — thawed
    1 graham cracker crumb pie crust

    Make or buy a graham cracker or chocolate crumb pie crust (9 inches). Beat cream cheese and peanut butter until smooth. Add sifted powdered sugar, milk, and beat until well mixed. Fold in topping and spoon in pie shell. Chill in freezer 15 minutes.

    I take chocolate syrup and drizzle it over the top.

    We made this for dinner tonight, my family loves it! This recipe is for the crockpot, but I make it in the oven also. I’d cook it at 350 for about an hour and a half depending on how much chicken and how big the pieces are.

    Garlic Brown Sugar Chicken

    Amount Measure Ingredient — Preparation Method

    1 large chicken — cut into pieces
    1 cup packed brown sugar
    2/3 cup vinegar
    1/4 cup 7-Up®
    2 tablespoons minced garlic
    2 tablespoons soy sauce
    1 teaspoon pepper

    Place chicken in crockpot. Mix all remaining ingredients and pour
    over chicken. Cook on low for 6-8 hours. Serve over rice or noodles.
    You can thicken the juices after cooking with a little cornstarch.

    NOTES : Wonderful sauce!! Will definitely make again, and will use the sauce for shrimp stir fry maybe?? YUM!

    This is called 2-Minute Fudge
    Ingredients
    1 1 lb.box confectioners sugar
    1/2 cup cocoa
    1/4 teaspoon salt
    1/4 cup milk
    1 tablespoon vanilla extract
    1/2 cup (1/4 lb) butter
    1 Cup chopped nuts

    Preparation Quick and Easy Microwave Recipe
    1. In 1 1/2 qt. casserole stir sugar, cocoa, salt,milk and vanilla together until partially blended(mixture will be too stiff to thoroughly blend all of the dry ingredients).
    2. Put butter over top in center of dish.
    3. Microwave on high for 3 minutes, or until milk feels warm on bottom of dish, Stir vigorously until smooth.If all the butter is not melted during cooking ,it will as mixture is stirred.
    4. Blend in nuts .Pour into 8×4x3 dish lined with wax paper.Chill 1 hour in refrigerator or 20-30 minutes in the freezer. Cut into squares.
    Makes about 36 squares.
    This is really good and quick to make,between Bingo and this recipe, I,m gonna have to buy a Beeper for the back of my Butt.
    Wide load coming through.Lol

    For those that want something simple and low fat here is a good one for your slow cooker: Enjoy!

    Chicken and Dumplings
    Serves 8

    2 med Yukon Gold potatoes, cut into 1 in. pieces (about 2 cups)
    2 cups fresh or frozen baby carrots
    2 stalks celery, sliced (about 1 cup)
    1 1/2 lbs skinless boneless chicken breasts, cut into 1 in. pieces
    2 cans (10.75 oz ea.)cream of chicken soup(we used the 98% fat free)
    1 cup water
    1 tsp dried thyme leaves, crushed
    1/4 tsp freshely ground black pepper
    2 cups buttermilk baking mix
    2/3 cup milk (we used skim milk worked just fine)

    Place potatoes, carrots, celery and chicken in a 6 qt slow cooker.

    Mix soup, water, thyme and pepper ina bowl until blended. Pour over the chicken and vegetables. Cover and cook on High for 4-5 hours or on Low for 7-8 hours until chicken is cooked through.

    Stir baking mix and milk in a bowl until blended. Spoon batter over chicken mixture. Turn heat to High (if you cook on Low setting to start with). Tilt lid** to vent and cook for 30 minutes or until dumplings are cooked in the center. (for some reason it sometimes take a bit longer then the 30 minutes in recipe for dumpling to get done)

    ** Instead of tilting lid on cooker - tip: take about 8 paper towels and stack them together and put them over the top of the crock pot before putting the lid back on this stops the build up condensation from the steam to make your dumpling wet.
    * Tip 2-by spaying your slow cooker with a non stick spray like Pam it helps for easy clean up, food doesnt stick in pot and does not alter the flavor.

    This is my FAVORITE chili recipe. I’ve tried lots and this is the best ever. It seems like a lot of ingredients, but its very simple to make. Great for a cold winter day! (not that i have those hehe)

    1 pound ground beef
    1 pound italian sausage
    1/2 pound pork tenderloin — chopped
    1 small onion — chopped
    1 tablespoon paprika
    1 tablespoon cocoa powder
    1/3 cup brown sugar
    12 ounces beer
    1 can white kidney beans
    1 teaspoon cayenne
    1/3 cup chili powder
    1 teaspoon oregano
    1 teaspoon garlic powder
    2 cans diced tomatoes
    1 teaspoon cumin

    Directions
    a.. Cook all meats together in big saucepan with ½ of beer.
    b.. Once boiling add all ingredients and let simmer on low.
    c.. *add remaining beer
    d.. *do not drain any liquids from kidney beans or tomatoes. (Add in pot)
    e.. Use hand help potato masher to mash all ingredients together about every half hour.
    f.. Let simmer 3 to 4 hours

    i would like to say there are some aesome recipies in here and ty for them all . lol bill at spay, sounds like to took mytyoing class oll jk.i have a printer i got when i got my lap top and goingto get it hooked up so i can print these recipies for future so i may try them, they sound really delicious !!!!

    Kimmers,

    Do you have some wide noodles and cheddar cheese?
    Parboil the chicken, cut up into bite size pieces. Cook noodles and drain.
    Mix chicken, noodles and vegetables into casserole dish.
    Mix mushroom soup with 1/2 cup milk and 1/2 cup shredded cheese together. Pour over chicken mixture. Top with more cheese. Bake 350 degrees for 20 minutes.
    Nice comfort food on a snowed in day.

    SHRIMP CASSEROLE 1 med green pepper 1 med onion 1/4 cup butter 3cups cooked rice 1pound raw shrimp 1can cream mushroom soup 2cups shredded cheddar cheese 1/4 t. cayenne pepper. melt butter in skillet, dice onion and pepper and saute in butter with cayenne pepper until onion and pepper are soft. and raw shrimp and stir til shrimp turns pink. mix cooked rice, soup and cheese in a bowl and add shrimp mixture, pour into large casserole dish and bake at 400 for about 30-40 minutes.

    This is an awesome burger! If you like it spicer add more peppers, cut out a few if you don’t. Its not really tooo spicy as the cream cheese cuts some down.

    Jalapeno/Cheese Stuffed Burgers

    2 tablespoons worcestershire sauce
    1/2 teaspoon salt
    1/4 teaspoon garlic salt

    1/4 teaspoon chili powder
    1/4 teaspoon ground cumin
    1/2 teaspoon minced onion
    1 jalapena pepper — seeded and minced

    Mix meat, Worcestershire sauce and seasonings. Shape the mixture into
    12 thin patties, each about 4 inches in diameter. Mix the cream
    cheese, chili powder, cumin, dried onion and minced jalapeno. Top
    each of 6 patties with the cheese mixture, spreading to within 1/2
    inch of the edge. Cover each patty with one of the remaining patties,
    sealing the edges firmly. Broil or grill the patties 4 inches from
    the heat, turning once, until the desired doneness is reached and
    cheese is melted, about 10 to 15 minutes.

    Easy Stroganoff

    I made up this recipe when I was a young new bride ( many many moons ago LOL ) it was good for an army budget.

    1lb ground beef cooked and drained
    1 can cream of mushroom soup
    1 soup can of milk
    1/2 cup sour cream
    1 bag wide egg noodles cooked and drained
    Salt & pepper to taste

    Mix all ingredients together ( except noodles ) and simmer 15 minutes. Serve over noodles. Add some rolls and a green salad for an easy nutritous dinner.

    Baked Potato Soup

    Great way to use leftover baked potatoes or use fresh.
    6 cups chicken stock ( i save mine when i boil or bake chicken and freeze till needed)
    6-8 med potatoes ( rough chopped)
    Salt & Pepper to taste
    1/2 cup cup sour cream
    1 cup shredded cheddar cheese
    1/2 cup bacon bits
    3 tablespoons chives (optional)
    1/2 cup instant potato flakes

    Cook all the cut-up potatoes ( except for 2) in stock for atleast 30 minutes on medium heat, or until they start to fall apart. Then add the other 2 potatoes and cook another 15 minutes or until last addition is tender.( this makes for nice chunks of potato) Then add potato flakes to thicken , stir in sour cream, cheese, salt& pepper,bacon bits and chives.Serve in bowls, you can garnish with additional sour cream etc.

    Super Easy Strawberry Shortcake

    1 boxed strawberry cake mix made to directions ( can use vanilla cake and add 2 teaspoons of strawberry flavoring)
    1 small box of strawberry jello made to directions, but only allow to soft set not firm completely)
    2 cups fresh strawberries (marinate in 1/2 cup sugar and 2 tablespoons of almond flavoring)
    1 large container of cool whip

    Prepare cake according to box and bake in a 13×9 pan. Allow to cool slightly and take a wooden spoon handle and poke holes about 2-3 inches apart in the cake. Spoon soft set jello over entire cake and allow to soak in. Then pour marinated strawberries over top and spread out. Cover entire top with cool whip. Serve immediately. Keep leftover ( if there is any) in the fridge for up to 3 days.

    Lazy Stuffed Cabbage

    3 lbs. ground meat cooked and drained
    1 large head of cabbage cut up then fry lightly in butter
    2-3 cups cooked instant rice
    2 large jars Prego

    Mix all ingredients together put into baking dish and top with shredded mozzerella cheese.
    Bake for 30 minutes at 350 degrees.

    May also be made ahead of time and frozen.

    Corned Beef & Cabbage

    1 head of cabbage ( cut into large chunks)
    1 Corned beef brisket with seasoning packet ( found in meat section at grocery store)
    4-5 medium potatoes ( quartered)
    3 or 4 large carrots ( chopped into 3 or 4 sections)

    Cook corned beef about an hr in a large pot with 2 cups of water. Add chopped carrots & potatoes, simmer 15 minutes, then add cabbage and simmer 15-20 minutes more or until veggies are tender.

    7-oz. bar dark chocolate, broken up
    2 tubs (8-oz. ea.) mascarpone cheese, room temp.
    1-ready-to-fill Oreo pie crust
    Microwave chocolate 15-second intervals till melted. Put mascarpone in lg. bowl; stir in chocolate till no white streaks. Spoon and spread into piecrust. Let set 1 hour. If refrigereated. set out 30 min. till slicing. Enjoy!!!

    Easy Peanut Butter Pie my Grandma
    1-lg. box Butterscotch Pudding (the cooked kind)
    1 cup peanut butter
    Make pudding as directed for pie. When done, add peanut butter thoroughly. Pour into baked pie shell and chill. May add meringue on top or whipped topping. Enjoy!!!

    1/2 cup butter (margene works also)
    1 cup brown sugar
    1 1/2 cups flour
    2 teaspoons baking powder
    2 egg yolks
    1/2 teaspoon vanilla

    Mix an spread evenly in 9 x 11 baking dish, pat firmly.
    Over this spread evenly 1 cup nuts or coconut.
    Spread over this 2 egg whites beaton stiffly with 1 cup brown sugar

    Bake at 350 degrees approx. 15 50 20 minutes

    mixed fruit or your choice can replace nuts or coconut.

    Cabbage & Kabasa
    Ok, this is my half Polish part speaking,
    cut up a head of cabbage, carrots, potatoes,with any Kind of smoked sausage (Kabasa) .Throw it all in a big pot and cook till the cabbage is soft usually an hour.Make as much as you want,you can add some mushrooms if you like. salt and pepper to taste.It is so good.And most of all it is so easy.Bet you will like it,my mom showed me this one.Its almost like a cabbage soup, but better.Add fresh rye bread and butter and a salad you got a nice meal.Try this Mark you will love it.

    Corned Beef and Cabbage

    Ingredients:
    Ingredients
    6 small new potatoes, quartered
    2 medium carrots, peeled and thickly sliced
    1½ to 2 pounds corned beef brisket
    1 medium yellow onion, cut into eighths
    3 bay leaves
    8 whole black peppercorns
    ½ head green cabbage, cored and cut into wedges

    Place the potatoes and carrots in the bottom of the stoneware. Cover with the beef brisket and place the onion, bay leaves and peppercorns on top.
    Add enough water to cover the brisket. Cover and cook on High for 4 to 5 hours or on Low 8 to 10 hours. Halfway through cooking, add the cabbage wedges.

    Soft Oatmeal Cookies

    1 cup packed brown sugar
    2 eggs
    1 teaspoon vanilla extract

    3 cups quick cooking oats

    In a medium bowl, cream together butter, white sugar, and brown sugar. Beat in eggs one at a time, then stir in vanilla. Combine flour, baking soda, salt, and cinnamon; stir into the creamed mixture. Mix in oats. Cover, and chill dough for at least one hour.
    Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets. Roll the dough into walnut sized balls, and place 2 inches apart on cookie sheets. Flatten each cookie with a large fork dipped in sugar.
    Bake for 8 to 10 minutes in preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

    over the pieces of bread. Sprinkle with ½ C. of the mozzarella
    cheese. Combine sauce, water and garlic. Add meatballs. Pour over
    the cheese mixture. Sprinkle with the remaining cheese. Bake
    uncovered at 350 for 30 minutes or until heated through.

    Tortilla Soup

    1 chicken — boiled and deboned
    broth from chicken
    2 cans chicken broth
    1 can diced green chilies
    1 can tomatoes with green chilies
    1 large black beans, canned
    2 cloves garlic — minced
    1/4 cup lime juice
    2 tablespoons cilantro
    1/2 teaspoon cayenne
    1/2 teaspoon cumin
    4 flour tortillas
    1 tablespoon olive oil

    Combine the chicken broth, green chilies, tomatoes with green chilies, onion, and garlic in a soup pot. Add the shredded chicken. Bring to a boil, stirring frequently. Reduce heat and simmer for 30-35 minutes.
    Add the lime juice, cilantro, cayenne, and cumin. Simmer for 10-15 minutes longer.
    Cut the tortillas into 1/2 x 2-inch strips. Fry in hot olive oil in skillet until golden brown; drain on paper towels.
    Ladle the soup into bowls. Garnish with shredded Monterey Jack cheese and the tortilla strips.

    Creamy Tomato Tortellini

    2 cups frozen broccoli flowerets
    1 can Italian-style tomatoes — undrained
    4 ounces cream cheese — cubed

    1/4 cup grated parmesan cheese

    COOK pasta as directed on package, adding broccoli to
    the boiling water for the last 3 min. of the pasta
    cooking time.

    MEANWHILE, cook tomatoes in large skillet on medium
    heat 5 min. Add cream cheese and seasoning; cook 2 to
    3 min. or until cream cheese is completely melted and
    mixture is well blended, stirring frequently.

    DRAIN pasta mixture. Add to tomato mixture in skillet;
    mix lightly. Sprinkle with Parmesan cheese.

    Substitute
    Substitute your favorite frozen vegetable blend for
    the broccoli.

    Serving Suggestion
    Serve this main dish with a mixed green salad for a
    quick-and-tasty weekday meal.

    Caramel-Frosted Hummingbird Cake

    Prep 65 min Bake 20 min Cool 2 hrs Oven 350

    INGREDIENTS

    3 eggs, lightly beaten
    3 cups all-purpose four
    2 cups sugar
    1 tbsp baking powder
    1 tsp salt
    ¼ tsp ground cloves
    2 cups mashed bananas (approx 5 medium)
    1 cup cooking oil
    1 ½ tsp vanilla
    2 cups peeled, shredded uncooked sweet potatoes (about ½ lb)
    1 8 oz can crushed pineapple, (juice packed) drained
    1 recipe Caramel Butter Frosting (recipe follows)

    PREPARATION

    Let eggs stand at room temp 30 minutes. Preheat oven to 350F. Grease three 9 inch cake pans, Line bottom with waxed or parchment paper. Grease & flour paper: set aside.

    In bowl combine flour, sugar, baking powder, salt, and cloves. Stir in bananas, oil, eggs and vanilla until moist and thick. Stir in sweet potatoes and pineapple. Spread evenly in prepared pans.

    Bake 30 minutes or until pick inserted near centers comes out clean. Cool pans on wire racks 10 minutes. Remove from pans. Peel off paper. Cool completely.

    Prepare Caramel Butter Frosting. Place one layer, flat side up on plate. Spread top only with 1 ¼ cups frosting. Stack and frost remaining Layers. Makes 16 servings.

    Caramel Butter Frosting

    In large saucepan melt 1 cup butter; add 2 cups packed brown sugar. Bring to boiling over medium heat; stir constantly. Cook and stir 1 minute; cool 5 minutes. Whisk in ½ cup milk until smooth. Whisk in 6 cups powdered sugar until smooth. Use at once, frosting stiffens as it cool. Makes 4 cups.

    The frosting hardens to seal in the moistness of the cake.
